Just Matcha began with a simple question: What does real matcha actually taste like? Like many people, we tried different "matcha" drinks that were dull, bitter, or overly sweet, nothing like what true Japanese matcha is meant to be. That curiosity turned into research, conversations with tea importers, sample testing, and eventually, a deeper exploration into Japan's matcha growing regions. What we discovered changed everything, the word “ceremonial” was mainly created for global marketing. Real, authentic matcha, the kind people now call ceremonial, has always come from the first harvest: the top 3–4% of the youngest spring leaves. These tender leaves naturally produce the sweetest, smoothest, most vibrant matcha, and are harvested in extremely small quantities that make up only about 4% of Japan’s total matcha output. True first-harvest matcha is bright, naturally sweet, and clean-tasting, never dull, bitter, or filled with additives. We realized many people had never actually experienced this quality. For clarity, our labels may still use the word “ceremonial” because it’s widely recognized, but the finest matcha has always been first harvest. We created Just Matcha to make pure, organic, authentic first-harvest matcha accessible to everyone.
